Ingredients
For the cupcakes
- 170g margarine or butter
- 170g granulated sugar
- 3 large eggs
- 170g self-raising flour (sieved)
- 56g Mealworm Powder
- 1 ½ tsp vanilla essence
- Dash of milk
For the buttercream
- 125g butter
- 250g icing sugar
- 1tsp vanilla essence
- Mealworms for sprinkling
Method
1. Preheat the oven to 180 C/160 fan and line a cupcake tin with 12 cupcake cases. |
2. Beat the butter and sugar together until light and fluffy. |
3. Add the eggs a bit at a time with a spoonful of sieved flour. Then add the vanilla essence and beat well. |
4. Fold the flour in a tablespoon at a time with a metal spoon. |
5. Fold in the mealworm flour. |
6. If the mixture is a bit stiff add a dash of milk to slacken it until it’s a dropping consistency. |
7. Spoon into the mixture into the cupcake cases. |
8. Bake in the oven for 15-20mins. Check they are ready by inserting a skewer into the middle of the largest cupcake. If it comes out clean, they are done. |
9. Leave to cool on a wire rack. |
10. While these are cooling you can make the buttercream. Beat the butter in a mixer for 5-10 mins until lighter in colour. |
11. Sieve in the icing sugar a tablespoon at a time and mix. |
12. Add the vanilla essence and mix in until the buttercream is light and fluffy. Then place the mixture in a piping bag ready to decorate your cupcakes. |
13. Decorate your cooled cupcakes and garnish with whole mealworms. | |
